Chef Sebastian Michels conjures up regional fish and meat dishes for guests and redefines northern German cuisine.
The "Fang & Feld" restaurant is located on the 7th floor, in the historic Kaispeicher of the Elbphilharmonie at The Westin Hamburg. The location offers space for 170 guests. Fang & Feld combines fresh, Hanseatic products with influences from all over the world. The focus is on authentic, North German cuisine and an ambience to feel good in. All products that are served at Fang & Feld come exclusively from the Hamburg region. The kitchen team sources fruit and vegetables from the Alte Land, the meat comes from Holstein pasture-raised beef and the fish is freshly caught from North Sea cutters. Flavourful, modern dishes such as roasted cod fillet with North German Schnüüsch and crispy bacon or fillet of beef from Schleswig-Holstein with roasted apple potatoes, parsnip puree and hazelnuts are served. The restaurant has a balcony with the best view of the Elbe, and the interior focuses on harmonious and clean lines in a warm colour setting - typically hanseatic.
